Umeboshi Rice

Ingredients

  • 1 cup rice

  • 1 cup water

  • 70g umeboshi (salt content 10%)

  • 100g edamame

  • Salt

  • Sesame seeds for garnish

Steps

  1. Put the rice in a bowl, add water and stir to wash away bran, then quickly drain. Add fresh water and repeat it until the water is not cloudy. Let it rest in a sieve for at least 30 min before cooking.

  2. Put the rice and water in a rice cooker and turn on.

  3. Remove the pit of umeboshi and chop finely. Cook edamame in salted water and pop the beans out of the pod.

  4. When rice is cooked, gently mix the umeboshi, edamame, sesame seeds, and salt into the rice.
