Wagyu Sukiyaki

Ingredients
100g sliced wagyu beef
6 pieces Japanese leek
2 pieces shiitake mushroom
2 pieces kinusaya (snow peas)
2 pieces yaki-fu (wheat protein)
2 tsp soy sauce
2 tsp sugar
1 tbsp mirin
1 tbsp sake
140 ml dashi
Steps
Leave beef out of refrigerator to bring back to room temperature about an hour before cooking.
Cut Japanese leek diagonally. Do decorative cut for shiitake mushroom and snow pea. Soak yaki-fu in water until it gets soft and squeeze it gently.
Mix soy sauce, sugar, mirin, sake, and dashi in pan and put Japanese leek and shiitake mushroom.
Simmer for 4 minutes
Add beef, snow pea, yaki-fu and simmer for 2 more minutes.
