Grilled Eggplant with Dashi

Serves: 2

Ingredients

  • 1 eggplant

  • 6 tbsp dashi

  • 1 tbsp soy sauce

  • 2 tbsp mirin

  • 1/2 tbsp rice vinegar

  • Ginger, Bonito flakes for garnish

Steps

  1. Put the finely cut at an angle to the skin surface of eggplant. Cut into a bite size.

  2. Grate ginger.

  3. Put enough oil in a pan and put eggplant with the skin side down. Turn over the eggplant.

  4. Add dashi, soy sauce, mirin, and rice vinegar in a pan. Cook it until half the liquid is gone.

  5. Dish up with grated ginger and bonito flakes.
