Chorizo

ingredients
250g ground pork
1/2 tsp salt
3 tbsp white onion, finely chopped
For Adobo
1/4 tsp cumin
1 tbsp coarse oregano
1 tsp whole black pepper
1 dried ancho pepper
2 dried guajillo peppers
2 garlic cloves
2-4 tbsp white vinegar
2 tbsp water
1 clove
1 small pinch cinnamon
1 pinch ground paprika
steps
1. Add salt to the meat, reserve.
2. Rehydrate the peppers in hot water for about 15 mins. When soft and ready, remove the veins and seeds. Keep the water they were rehydrated in.
3. One by one, roast the clove, pepper, oregano, and cumin in a pan. Grind in a mortar and pestle.
4. In a blender, mix all the ingredients except the ground pork.
5. Add this mixture to the raw salted meat and let it marinate for at least 30 minutes (preferably not in the fridge)
6. Fry white onion and then add the meat. Cook until well done.
7. Use with eggs, quesadillas, tacos, sopas, soup, etc.
