Flan Napolitano
Serves: 6
ingredients
6 tbsp sugar
1 can condensed milk (387 g/293 ml)
1 can evaporated milk (396 g/373 ml)
5 eggs
1 tsp vanilla
2.5 tsp Amaretto
1 pkg cream cheese (190 g)
cajeta melted with milk for drizzle (optional)
roasted chopped nuts (optional)
steps
1. In a small pan, melt the sugar until golden brown (do not let it burn, because it gets bitter). Place the caramel in a mold for flan or in individual molds or ramekins. You can melt the sugar directly on the mold if preferred. Let it cool for about 5 minutes.
2. In a blender, blend very well the 2 milks, eggs, cream cheese, vanilla, and amaretto.
3. Pour over the mold for flan or the ramekins and place in the oven.
4. Bake in a water bath at 320F for 60 minutes in a big mold, or 15-20 mins for smaller ones. Flan must be quite stiff and the toothpick should come out clean.
5. Let cool before removing from the mold with a single flip.
6. Decorate with drizzled cajeta and roasted nuts if desired.
