Yakitori-Tsune

Ingredients
120g ground chicken
60g onion
2 shiso leaves (mint family)
grated ginger
pinch of salt
1/2 bsp sake
4 tsp potato starch
1 tbsp soy sauce
2 tbsp mirin
Daikon radish for garnish
Sansho (Japanese pepper)
Shichimi togarashi (Seven spice blend)
Steps
Finely dice the onion. Grate daikon radish.
Combine chicken, onion, ginger, salt, sake, and potato starch. Mix well until sticky.
Divide the mixture into 6. Shape to form slender oval. Put a shiso leaf one of them.
Heat oil and put the chicken mixture. When the bottom sides turn golden brown, turn over and put some sake and cook with lid for 2 minutes. Make yakitori sauce, combine soy sauce and mirin in a bowl.
Once those are cooked, add the sauce then coat.
Take out to a serving dish and skewer them.
Sprinkle a sansho onto one of them.
Add grated daikon radish and shichimi togarashi.
