Vegan Mousse Cake

serves: 8-10

ingredients

32 oreos
2 tablespoons melted margarine
600 grams silken tofu, drained (approximately 20-21 oz)
1/2 cup real maple syrup
2 teaspoons real vanilla extract
400 grams dark chocolate, melted
1 ripe avocado


steps

1. Crush a package of oreos with a rolling pin or in the blender, add 2tbsp of butter/margarine. Press into cake pan for crust
2. Melt 4oz of dark chocolate, let cool for a few minutes. Meanwhile throw 1.5 packages of silken tofu and an avocado and 2 tbsp maple syrup into blender. Blend until smooth. Add melted chocolate and blend until combined. Pour over oreos, let set in fridge for an hour or two.
3. Melt 4oz of dark chocolate with 4oz of water, stir until smooth (will look chunky and bad at first but keep stirring). Let cool 5-10 minutes, pour over mousse. Cool in fridge until ready to eat.
