Peixinhos da Horta

Serves: 4

Ingredients

  • 500g flat green beans

  • 50g all-purpose flour

  • 50g rice flour

  • 11 fl.oz cold sparkling water or beer

  • 1 egg

  • salt and freshly ground black pepper

Steps

  1. Cut the tips and halve the green beans.

  2. Make a batter: combine the 2 flours, egg, salt and pepper in a large bowl and stir well. Add the sparkling water and beat well until a smooth batter forms.

  3. Dip the beans into the batter, shaking off any excess.

  4. Fry on both sides until golden brown

  5. Take out of pan and drain. Ready to serve with mayonnaise.
