Accordian Cucumber Salad

Serves: 2

Ingredients

  • 1 cucumber

  • 1/4 myoga (japanese ginger)

  • 1 tsp soy sauce

  • 2 tsp rice vinegar

  • 2 tsp sugar

  • 2 drops of sesame oil

Steps

  1. Lay a cucumber between chopsticks placed its width

  2. Slice diagonally, don’t cut the cucumber all the way to the bottom.

  3. Flip the cucumbers and cut the same way as before

  4. Cut off about 2cm, apply salt and sit few minutes. Wipe the excess moisture off with paper towels.

  5. Mix soy sauce, rice vinegar, sugar, and sesamie oil to make dressing.

  6. Slice myoga

  7. Toss cucumber and myoga in dressing.
